A Latin American treat, alfajores are shortbread cookies with dulce de leche filling between them. But this recipe from The White Ramekins adds a twist. The sandwich cookies have been rolled in toasted chopped almonds. Food blogger Himanshu Taneja, who made this recipe, says they taste better the next day, since the cookies become softer with the moistness of the filling. Although we wouldn’t be worried about any leftovers.







260 grams all-purpose flour
1/4 tsp salt
200 grams unsalted butter, room temperature
60 grams confectioners (powdered or icing) sugar
1 tsp pure vanilla extract

Approx. 1/2 cup finely chopped almonds, toasted
